Each wine was a field blend; Nerello Mascalese (95%), Nerello Cappuccio, Alicante (Grenache) and a small percentage of white grapes (Grecanico, Minella, Catarratto). One vineyard was vinified in a 20 hl oak cask, another older, higher vineyard in a Qvevri, others in mastellone and stainless steel.
When it came time to bottle Palmento Rosso, Jeudi 15 and Qvevri 2016, these wines didn’t fit into the above blends from a stylistic point. So a decision was made to blend them together to create a new red from Mt Etna; Palmentino Rosso.
The resultant wine is vibrant crimson in colour, with attractive dark cherry and strawberry aromas. It is medium in body, has dried strawberry, tomato and olive notes, good acidity and fine dusty tannins. In comparison to our other wines it is more vinous and savoury than Palmento Rosso but does not have quite the complexity or depth of Jeudi 15 or our Qvevri wines.
